The Products

Searching for the finest, for seasonality, and for territory is our philosophy. 
We have selected some of the products that make Campania great around the world and that make our pizzas special. 

Our oil is an organic extra virgin olive oil from Don Alfonso 1890 in Sant'Agata Sui Due Golfi.
The fior di latte is from Mount Lattari; the mozzarella is naturally mozzarella di bufala Campana PDO from carefully selected Campanian dairies. We get our anchovies from Cetara, an ancient fishing village on the Amalfi Coast which is famous for its anchovy fish sauce.

Another excellent Campanian product is Conciato Romano, a rare cheese dating back thousands of years and aged in terracotta amphoras. It is still produced by hand and is unique for its intense and pungent aromas.  Even our garlic is special; it is from the Valley dell'Ufita in Irpinia and contains a high content of essential oils, active ingredients, and highly aromatic flavor. Our capers, instead, come from the Aeolian island of Salina while our flavorful and spicy 'nduja is produced by artisans from Spilinga. There’s also Pecorino Romano PDO and Parmigiano Reggiano PDO which have been aged for 24 months. Tomatoes are a world apart and we have chosen only the best: San Marzano PDO from Agro Nocerino Sarnese, naturally, and piennolo tomatoes from Vesuvius PDO.

Season after season we adjust our menu to offer only the finest products such as curly escarole  for the stuffed pizza, broccoli raab, bitter arugula, zucchini flowers, tomatoes from Corbara, eggplant, and artichokes.
